I was diagnosed with Celiac disease. Learning how to eat gluten free. I also had SIBO and had to eat a specific diet for that particular intestinal infection. She laid out a specific plan of foods, supplements and options that showed me how to eat gluten free. She gave great suggestions for food choices both in the grocery store and going out. She asked the right questions and takes the time to listen. She wants to know how you are feeling every step of the way. She does not want you to feel deprived or bad about the diagnosis, but empowered. She asked questions and listens to how I was feeling about this new change in my eating habits. She never made me feel rushed or made me feel bad for my changing emotions toward food. It was not an easy journey - you go from eating anything that you want and eating anywhere to being limited and having to think about each meal you eat. She helped me deal with the emotional roller coaster of my feelings toward food. I went from enjoying food, to hating to eat and feeling overwhelmed with every meal. Kathleen taught me to balance out my feelings toward food and even feel comfortable going out. She gave great suggestions reminding me of the seriousness of cross contamination and making sure to let people know I have Celiac (just indicating gluten-free is not enough). I feel the best part of Kathleen's program is that she cares, she asks the right questions to get you in touch with your feelings toward food and helps you live a gluten-free life. I do appreciate her help in getting me to the point of feeling in control of what I eat and how I choose my food. Living with Celiac is something I can now manage. I was suffering from sudden onset SIBO, it turned my life upside down for about a year. It was only after I met with Kathleen that I could understand how to eat what I needed to maintain my energy AND keep my SIBO symptoms under control. I just wanted to thank you, I have always wanted to write you an e-mail since the first appointment. I remember at times I was only getting a couple of hours of sleep because of the almost unexplainable pain that I was experiencing at that time. The time that you gave to explain and share my symptoms was long enough for me to feel comfortable and the time that you took explaining, and going through foods, recipes and books was very important, the way you explained and made the effort to picture how my problem might be happening in my stomach and how it affected the side and the back of my body helped me a lot in controlling my symptoms and it helps me a lot on getting more sleep time, going to the gym, and at work.
